Meal Planning - January Re-Cap

Where did we get to for the month of January?

Total Spending: $503, but bought $553 worth of food as I cashed in a bunch of PC points I'd accumulated in December overbuying to qualify for some point offers.

As you can see from the previous posts my mealing planning went downhill about halfway through the month. I often go through phases where I'm excited about cooking and our meals and then into phases where I can't be bothered to cook much.

I'm focusing on using up the items in our pantry and freezer, but did end up stocking up a bit due to sales on coffee and cheese and buying a couple ready made meals for the nights I didn't feel like cooking (a few pizzas and a chicken pot pie). The amount of waste generated when I'm feeling lazy does reinforce I should try to find the motivation to make these things rather than buy. 

So what did we eat during the 2 weeks I only loosely followed my meal plan?
  • Pumpkin pancakes
  • Costco Pizza
  • Costco Chicken Pot pie
  • Beef & Broccoli stir fry
  • Ground Turkey Chili
  • Chicken Enchilladas
  • Black bean burrio bowls
  • OSG Sweet potatoes & lentils
  • Spaghetti
  • terriyaki chicken & veggies (pre-marinated in the freezer)
  • Perogies, sausages with veggies (cabbage and carrots)
  • Black bean soup

Have my daughter's birthday party coming up so focusing on getting her cake and cupcakes made. Dinner for the next couple days will be using up some more leftovers and dinner's out. Will attempt to get back on the meal planning train and writing them up as I go.
